Cupcakes: a recipe



Given the increasing (creciente) number of shops that are opening in big cities lately (últimamente), it seems that cupcakes are now coming into vogue (ponerse de moda) in Spain . The name comes from the amount (cantidad) of ingredients used to make the cake: a cupful (una taza llena) of flour, a cupful of butter, cupful of sugar etc. and also from the fact that they were originally baked (horneados) in cups. Cupcakes are one of America’s first and finest (excellente) contributions to world cuisine. They became all the rage (se pusieron de moda) in the United States thanks to the TV series Sex and the City.

A Recipe for Cupcakes from 1828
Ingredients

• 5 eggs.

• Two large tea-cups full of molasses (melaza)

• The same of brown sugar, rolled fine.

• The same of fresh butter.

• One cup of rich milk.

• Five cups of flour, sifted (tamizado).

• Half a cup of powdered allspice (pimienta inglesa) and cloves (dientes de ajo).

• Half a cup of ginger (gengibre).

Preparation

Cut up the butter in the milk, and warm them slightly (ligeramente). Warm also the molasses, and stir it (remueve) into the milk and butter: then stir in, gradually, the sugar, and set it away to get cool. Beat (bate) the eggs very light, and stir them into the mixture alternately with the flour. Add the ginger and other spice, and stir the whole very hard. Butter small tins (moldes de hojalata), nearly fill them (llénalos casi del todo) with the mixture, and bake the cakes in a moderate oven (horno).
